Fish Tacos

PREP 30 minutes COOK 13 minutes SERVES 4

This recipe uses mini tortillas, and they are surprisingly filling! Crunchy red cabbage and a spicy, crispy coating on the fish make these tacos a feast for the senses. A fun way to serve friends, as everyone can help themselves to the different elements to build their ultimate taco, just the way they like it. A final drizzle of hot sauce is optional, depending on how fiery you’re feeling.

1 tbsp olive oil

a large handful of fresh coriander, finely chopped

½ red onion, finely chopped

200g cherry tomatoes, quartered

2 limes

100g red cabbage, finely shredded

100g white cabbage, finely shredded

1 carrot, grated

60g plain flour

2 large eggs, beaten

½ tsp ground cumin

½ tsp ground coriander

½ tsp cayenne or hot chilli powder

80g dried breadcrumbs (or panko breadcrumbs)

500g cod loin, cut into 12–16 thick fingers

olive oil spray

sea salt and ground black pepper
